Time to cook

In my quest to get healthy I purchased a new cook book. So far I am very pleased with this book. It has a picture for every recipe. Which I love.

Today's recipe is for Chicken Salad with Roasted Peppers

Don't you love all the little pink tabs sticking out of the sides. Those are all recipes I want to try. See I told you this book was good.

Here is your cast of characters.

In the bowl.

All mixed up.

Nestled safely in a whole wheat pita.

It was totally yummy.

Here is the recipe

2 cups chopped cooked chicken breast (about 3/4 pounds)
1/2 cup chopped green bell pepper
1/2 cup diced celery
1/2 cup dried cranberries
1/2 cup chopped bottled roasted red bell peppers
1/4 cup chopped red onion
1/4 cup chopped pecans, toasted
1/4 cup light mayonnaise
2 teaspoons low-sodium soy sauce
1/4 teaspoon crushed red pepper

1. Combine all ingredients in a medium bowl; toss well. Cover and chill until ready to serve. Yield: 4 servings (serving size: 1 cup)

I am running?

I have started a new venture. Running. Actually, I think the new venture is more like getting healthy. I am 34 years old. I have scoliosis. As I get older I am really starting to feel the affects of that. Way more then I want to. Way more then I like to admit. Recently my monthly "maintenance" visits to the chiropractor have started to include a 30 minute massage and sometimes I am not sure I can make it to my next appointment. Jeez. I really sound pathetic. Well no more. I am putting my foot down! Taking charge! Controlling the situation. Whatever you want to call it.

In my quest to take control I jumped in head first with exercising. Can I just tell you that if you have not exercised in a while this is not the thing to do. TRUST ME! I have a new ice pack, heating pack and a giant size bottle of Advil that I picked up from Costco to prove it. Maybe this has something to do with the scoliosis that I have the great misfortune of having and maybe not. But I don't recommend it.

In steps my iPod. My quest started by looking for some music that is up beat and makes me want to move. I came across PODRUNNER Intervals. It is a podcast. There are 4 total, but I choose First day to 5k. You can check it out here. I am on week 2. I actually just got back from my 1st run on week 2. I am feeling pretty good. I haven't had to take an Advil, so in my book that is great! I walk/run around my neighborhood. I find that if I zig zag through the streets instead of going on a straight path it makes it easier. I guess it is because I can't actually see how far I am going. I go up on block and then over one. Up 2 and over 3. I change it up each time. Not only for my sanity, but for my safety too. You know, change up your routine so if someone is watching you. I know, I know, totally not something you want to think of, but when you live where I live and have family that are in law enforcement you tend to be extra cautious.

I weighed myself today when I got back from my ralk (run and walk combined) just trying to save key strokes. Back to weighing my self. I weighed my self on the Wii. I am at 143. My goal is to be at my ideal weight of 130. To be honest I am not even sure that I really care about the weight. I have in the past but as I get older that number just doesn't seem to be that important to me any more. I want to be able to go a week without back pain. I want to be able to run around with my kids or play sports with them with out being totally out of breath. I want to be able to stay on my once a month visits to the chiropractor. I want to be able to live. Have you ever heard the saying "Everybody dies, but not everybody lives"? Well that is how I feel. I am just going through the motions of life and I want to change that.

This is just my first step to a new and improved life. I need to eat better too. That is going to be easier said then done. I love, love, love food. I love cooking food. I love eating food. I am getting hungry just typing about it. I did buy a new cookbook. Cooking Light has a cook book out called Fresh Food Fast. It is 5 ingredient, 15 minute recipes. I have made a few things out of this book so far and am loving it. I will post some recipes from it as I make them. Just because I love you guys.

In designing news..... I am working on a new kit with the fabulous Aly of Truman Studios. We are celebrating her birthday this month at Digiridoo Scraps. She is the designer in the spotlight and she has some great things planned.

I feel like chicken tonight

I love cooking, but some days I am looking for something easy to make. This recipe is not only easy, it is yummy.

Let's get started.

Here are the 5 ingredents you will need. Yes you heard correct. Only 5 ingredients.

4 Boneless Skinless Chicken Breast
1 tablespoon Chili Powder
1 14.5 can of tomato sauce
Soft taco shells or tortillas
Sharp cheddar cheese

First you need to boil the chicken breast. I put the chicken in a medium size pot and add enough water to just cover it. Boil until no longer pink in the middle.

Maybe it's just me, but boiled chicken just looks gross.

Shred the chicken. I like to use two forks. Better yet, I like to make Babe do it.

Now lets make the enchilada sauce. Take your can of tomato sauce and mix it with 1 tablespoon of chili powder.

I like to mix it right in the can. One less dish I have to wash later.

Now take some of the enchilada sauce and mix it in with your shredded chicken. Just enough to coat it. Reserve the rest of the enchilada sauce. We will give it a great home later.

Now take one of your tortilla or soft taco shells and fill it with some of the shredded chicken mixture. This part you have to guesstimate. We are making enchiladas, not burritos, so don't use to much.

Roll the tortilla over. No need to fold in the ends.

Repeat until you fill a pan. When you place them in the pan make sure to put them seam side down. That way you don't have to worry about them unrolling. I am using a 13 x 9 Pampered Chef Rectangular Baker dish. Only $38.50 and worth every penny. Did you like my plug. I would not talk about this pan if I was not super in love with it.

Moving forward.

Now pour the remaining enchilada sauce over the enchiladas. It has found its home.

Spread the sauce all over. You don't want to leave any enchiladas out of being coated. That would just be unfair.

Sprinkle with cheese. I know I told you sharp cheddar, but I didn't have enough so I had to mix mozzarella with cheddar. I used 2% milk cheese too. My cholesterol could use the help.

Bake in a 350 degree oven until cheese is melted. Babe likes the cheese to be a little brown and crispy. Gotta please the husband. The choice is yours.

Mmmmm. Chicken Enchiladas with a dollop of low fat, cholesterol loving, sour cream.

Living in Florida has its perks. One of them being that we have already started swimming in the pool. We started in April. Yep, that's right, swimming in April. I called my Mommy the other day to see how she was doing and it was snowing. She lives in Wisconsin. No thank you. I think show is pretty and all but I need my sunshine.

What's for dinner?

I have to be honest. Lately, I have been slacking. My menu planning has gone by the way side. I am not happy about this. I can't even begin to tell you how important this is for me. I am a busy mom, wife, digital scrapbook designer, and landscape business owner. I need organization in my life. It is a must. If I plan to get all the stuff done that I need to get done I have to be organized. I have to have a game plan. I have decided today is the day that I would get back on the menu planning wagon. I plan for 2 weeks at a time. Here is my menu.

5/7 SAT - Sweet Mustard Chicken Thighs (from Cooking Light's Fresh Food Fast) with rolls and salad

I am retiring some kits

Today I have decided that I am going to retire some of my first kits. Mainly because I want to revamp then a little. As a designer I always look back on a kit and say I wish I added this or did that. These 3 kits are the ones I wanted to do that too. I want to give them a little redo love. So I am retiring them. For now. Please welcome the retiree's.

My Boys

I did this kit in dedication of my two boys. Everything from their favorite colors to their favorite shapes. Even though I love this kit, I think it could stand to use a little face lift. I can't believe I didn't include an alpha. What was I thinking.

Next is Little Diva

I did this kit in honor of my nieces. I want to add a little more.

Last but not least is Some Like it Hot.

This was my first kit. It is what got me into Polka Dot Plum. It has sentimental value to it, but I think it is time to retire. Not sure that I will be doing anything to this one, but you never know.

Combine the ingredients with ice in a martini shaker, shake approximately 1 minute and strain and serve in chilled martini glass. 1 serving

An Experiment

The other day I posted a silly comment on my Facebook page. "If I could get 1000 people to contribute $1.00 I could buy a laptop. I'm just saying." It got me thinking. Why can't we all help each other with just $1.00 a day. Think about it for a minute. Little Jimmy wants and needs a new bike. Mom can't come up with the money. How hard would it be for 100 people to donate just $1.00. In a matter of days Jimmy could be riding a new bike. All it cost you was $1.00. Wouldn't that feel great knowing that you just help make Jimmy's day. He will have the memory of his new bike for a life time.

I know that me wanting a laptop is totally different than Jimmy wanting a bike. The cost for one. The fact that I am an adult and Jimmy is not. But, just like Jimmy I really really really want a laptop. The memory that I will have from getting the laptop will last a lifetime just like it will for Jimmy, and I just really really want a laptop. With that being said, I have put a donate button on my blog. See it over there on the right hand side. Scroll down a little bit. There it is. Oh Project 52, how do I love thee.

I have nothing to release this week. I guess with Valentine's Day, kids being out of school and hubby coming home from being gone all week, it made it nearly impossible to get a kit done in time. The good news about that is, now I can show you what I have done on my Project 52. Never heard of Project 52, let me tell you a little bit about it. Basically, you take a picture every day. Then you scrapbook all the pictures for the week on 1 page. The pictures don't have to be perfect. Nor do they have to be of anything major. Just life. Which can actually pretty interesting if you think about it. Interesting isn't just a trip to a theme park or a big birthday celebration. It can be anything. As you will see with my Project 52.

I got turned on to P52 toward the end of last year. I know several people that do P365. I can not do P365. I just don't have the time or the patients or the discipline. That is when some one suggested P52 instead. This I can do. 52 layouts instead of 365. Ding! Ding! Ding! Ding! We have a winner. Plus, my grandmother had fallen ill and visiting her in the hospital gave me time to have chats with her. I didn't realize just how many things I never knew about her or that side of my family. I got to look at photo albums that are almost 100 years old. See pictures of my Great Grandfather when he was my age. There was one problem with these photo albums. Not only were they falling apart, they had no information in them. No names. For the most part no dates, no locations, nothing. The only information we had about the pictures was the information my grandmother could remember. Sadly I lost my grandma on December 5th. So I told myself that from that point forward I was going to document as much as possible. I want to be able to look back at my scrap books and be taken back to that day and time. My 13 year old sits and plays video games all day long, my dog loves to dig holes, my DH loves palm trees and has been growing them from a seed, I love to drink Starbucks. I want to take that journey back in time when I am 65 or older. I want to be able to show my grand kids what their daddy was like as a kid. All of this stuff is important to me.

Here is my journey so far.

Now I must tell you that I have missed a few days. But you know what, that's okay. That is no reason to give up. I just added a little flair to the page in the spot where the missing picture would go or just left that day out all together. Don't let perfectionism keep you have documenting all of these awesome memories. Trust me I know it is hard not to, but the memory is more important than the page being 100% perfect.

You will thank me for it later ;)

Think it is to late to start Project 365/52? Well it isn't! There is no rule or Project 365/52 god out there that says you can't start now and go 52 weeks or 365 days from today's date. You know I am right. Start today.

Thursday's Random Thoughts

I'm not sure if you guys know that I CT for 2 FAB designers. Ramona the Pest Designs and Victoria Feemster Designs. These ladies amaze me on a daily bases. They have been releasing some great products. I have been slacking and not really show casing all the FAB stuff they do. So today I am gonna play a little catch up. Plus I thought it would be a neat way for you to get to know me a little.

Look at that cute little face. How could resist. Honestly. This is of course is Stinky, my youngest son. Being Stinky. I used Ramona's newest kit Love You Still and a template from A+ Designs called Zippity Do.

This is my DH and Stinky. They are inseparable. I snapped this picture while they were drawing together one night. I used one of Ramona's Template Pack Vol. 3 and Home Sweet Home.

I don't get very many pictures of my oldest. He can be very difficult sometimes. I think that is why this layout is special to me. I used the kit Farm Country and again I used Template Pack Vol.3. I flipped the template on its side this time.

This is me with my oldest sister. We are 3 years apart. She is in the military so I don't get to see her much, but when I do, we have a blast. We took family photos when she was here. That probably won't happen again. She was pregnant with my nephew Lucas at the time. I used Friends Forever for this layout and a template by Sunflowers Studios.

Now lets move on to Victoria Feemster Designs. This is one busy lady!! She released all these kits in the same day!

This is my dog Rock. He is a white boxer. I honestly think he is the best dog in the world. I made this layout using Just Love Me. Sugar Hill Company had a thing called collect the collab where you could find the download links all around the site until you have the full kit. Pretty cool if you ask me.

This is another collab that Victoria did. This one is with Connie Prince (who I love) and it is called Pocket Finds It is perfect for all those boy layouts. I also used another template by A+ Designs.

This was using a kit called It's All Me. It is yet another collab that Victoria did. This time she teamed up with Spinky Dink Scraps. I love, love, love the colors of this kit. It is packed with 75 elements and 20 papers. I used it for my week 3 of Project 52. I will be posting more of my Project 52 in the future. Oh and I almost forgot. I used Everyday Life template from Happy Scrap Girl.

It's Grand Opening Day!!

This is the reason I have totally neglected my blog lately. I have been so busy trying to get ready for my grand opening over at Polka Dot Plum I just haven't had the time. Plus the kids have been out of school and I have been playing activities director. 6 days and counting. I will have a kindergartner and a 7th grader on my hands. Enough about that. Time for you to see my first kit EVER. Drum roll please.......

Well, what do you think? I am pretty proud of my self I must say. I learned a tons while doing this kit it is surprising that my head didn't explode. I am still learning tons too. I also have 2 paper packs.

I hope everyone had a fabulous weekend. Mine was pretty wet. It has rained for 4 days straight so far. For me Rain=sleep, so needless to say I have not got much done. My kids on the other hand have driven me totally insane. At least they are getting something done.

Today I have a few things for you. First PDP news. They are having a call. A Chatter Dot call that is.

Isn't it pretty. I had so much fun making this layout and I really really like the way it came out. I think it is one of my favorites. It is of my niece Kaylee. She is the cutest thing. I took this picture when we were visiting her in Alabama.

This is my DH's best friend and his son, Brady. I love the concentration and caution on Brady's face. He was kind of scared of the sparkler at first, but by the end of the night he was having a blast.

This kit is perfect for all the pictures you have of your kids with their daddy. He is the layout I did with it.

Look at those checks. This is my youngest less than a month after he was born. He was a chunkster.

I didn't have time to get a layout done with this kit on account my roof started leaking. RIGHT OVER MY COMPUTER. Talk about having a heart attack.

This is my layout.

I took this picture right after the Hubby and I finished eating at a local restaurant called the Salt Rock Grill. The back side of it is right on the water. They have a boat dock and everything. Talk about fresh seafood. If you walk across the street there is this beach. It was actually pretty hard to get the picture with out having people in it. I think everyone that comes to visit Florida checks out the sunset. Rightfully so!

I also did the Unbaked Brownie Challenge over at Brownie Scraps. It is where they choose a color scheme and you create something with it. Alpha, papers, a mini kit or a layout. I thought it was the perfect oppurtunity to get my feet wet in designing. I really had fun making it. Plus you get all the things that people made for free. That equals lots of freebies for you. I originally did this for a paper to digital challenge over at PDP, but wasn't thinking and used a kit that wasn't going to be released until after the challenge was over. I am a blonde. Anyway, this is my DH and my two wonderful boys. I snapped this picture when we were in Alabama visiting the in laws. It was such a great time.

The next one is from a new designer at PDP called Three Hearts Digital Designs. The colors in this kit blows my mind. I would have never thought to put them together but they look fabulous!!

I did this really cute layout of one of my little sisters. She was on a zip line in Hawaii. I'm so jealous!

I just found out that I will be working with 2 more FABULOUS Polka Dot Plum Designers. Victoria Feemster Designs and Three Hearts Digital Designs. Both of these ladies are super talented. I can't wait to dig in and start designing for them.

It is already Thursday and I can't believe how fast the week has gone. There is a lot of things going on for me right now in digi-land. Most I can't speak of, which is killing me.

Grand Opening of my Scrapping Blog

Howdy by Digiscrapping friends. Welcome to my new Scrapping blog. I eventually want to design so I plan on putting up cute little freebies from time to time. I also CT for some amazing Designers. Brandy Designs, Danielle Corbitt Designs, Ruby Lane, Pebbles Designs and I am a site ct for the fantabulous Polka Dot Plum. I will be posting new releases, links to freebies, links to awesome templates and some of my own work. I hope that you will follow me on my scrapping journey and have fun along the way.
